These little fries are thin and crispy, so they can be cooked super crisp. They're also perfect for air-frying, which makes them a lot easier. Why would you waste your time deep-frying when you could get the same results using far less oil? !
How do you make Crispy Fries in an air fryer?
Two tricks are needed to get crispy fries from the air fryer First, always soak your potatoes. To make air fryer shoestring fries, cut the potatoes in shoestrings and then soak them in icewater. To get rid of any starch, wash the potatoes thoroughly. To achieve crispy fry perfection, you need to get rid of the starch.
Another secret to success is the way you cook them. Spraying the fries with oil is better than spraying them. This ensures that they are evenly coated. Place the fries in an air fryer basket. Don't crowd them. Crispy fries will be possible by allowing air to circulate around the fry.

- Russet potatoes I prefer to leave the skin on but you can also peel them if necessary.
- Cold water
- Ice
- Peanut oil Vegetable, corn and canola oils all work well, but you don't want to use olive oil. You need oil with a high smoke-point.
- Salt and pepper
- Smokedpaprika This is my secret ingredient for super flavorful shoestring fries in an air fryer!
- Garlic powder
The dipping sauce is:
- Vegan mayonnaise - Store-bought or homemade vegan mayo.
- Yellow mustard
- Truffle oil
Which Potatoes are the Best for French Fries:
For crispy French fries, Russet potatoes are best; Yukon gold or any other waxy potato will not be as crisp. They are perfect for fries and most restaurants use them.
How to make Air Fryer Shoestring Fries
These air fryer shoestring fries are easy to make and don't take a lot of time. However, you should account for the long soak time in your cooking.
Soak potatoes. Use an electric mandoline to slice the potatoes. Cover the potatoes with water and then stir in the ice. Allow the potatoes to soak for 30 minutes. Then drain the water and let them dry for 30 more minutes.
Drain. Strain out the water from the bowl. Place the julienned potato on paper towels. Let them air dry.
Prepare. Pre-heat your air fryer to 400oF. Toss the potatoes with oil in a large bowl.
Heat the oil in an air fryer basket. Add the fries to the basket in an even layer. After 5 minutes, air fry the fries for another 5 to 7 minutes or until crispy and golden. Cool the pieces on a wire rack or on a plate lined with paper towels.
Season. Sprinkle the garlic powder and smoked paprika over the fries.
Prepare the sauce. Combine the vegan mayo and mustard with the truffle oil in a small bowl. Serve the sauce with the air fryer shoestring fries.
Tips to Success
These tips will make your shoestring fries perfectly crispy in the air fryer.
- Slice the potatoes into uniform sizes. Use a sharp knife to cut the potatoes into matchsticks measuring 1/8" x 1/8". If you want them to be crunchy, don't make them any thicker than that. Also, make sure they are all the same size so they finish cooking.
- They should be dried well. Your fries won't get crispy if there is still water on the fries after you have fried them in oil.
- Make batches if necessary. Too many fries in the air fryer basket can result in soggy fries. It's better to make several batches.
- You can make them yours. You can customize the recipe by adding your favorite herbs or spices. Season your fries with chili powder, salt, thyme or any other seasonings you prefer.

These air fryer shoestring fries are safe to freeze. The fries can be frozen for up to three months by placing them in an airtight container, freezer bag, or a bowl. Simply place the fries in an air fryer basket, and heat at 400oF for 5 minutes.

Air Fryer Shoestring Fries
Ingredients
- 3 large Russet potatoes unpeeled
- Cold water for soaking
- 3 cups ice
- 1/4 cup peanut oil Canola, vegetable, and corn oil all work well. Don't use olive oil.
- Salt and pepper to your taste
- 1/2 teaspoon smoked paprika to taste
- 1 teaspoon garlic powder
- 5 tablespoons vegan mayonnaise
- 8 tablespoons yellow mustard
- 1/4 teaspoon truffle oil
Instructions

To slice the potatoes, use a mandolin with the "julienne” setting. You can also use a sharp knife to cut the potatoes into matchsticks measuring 1/8" x 1/4". If you want them to be crunchy, don't make them thicker.

Let them soak. Place the sliced potatoes into a large bowl. Add the ice to the bowl and cover them with water. Stir twice gently. Allow them to soak for 30 minutes. Then, drain the water and do it again. Allow the water to soak for at least 1 hour.

They should be dried. Strain the water, and place the potatoes on paper towels. Let them dry completely.

Make sure to grease them. Heat the oven to 400 F. Place the potatoes in a large bowl. Pour the oil into the bowl. Toss the potatoes until they are completely covered in oil.

Fry the potatoes. Sometimes you may need to do this in batches. The french fries should be fried for five minutes. Mix the ingredients together. They can be fried in the oven for an additional 5-7 minutes, or until crispy and golden. Remove them carefully from the heat. To cool, place them on a wire rack.

Season the fries. Salt and pepper to your liking. Sprinkle the garlic powder and smoked paprika over the fries. Allow them to cool.

Make the sauce. Mix the vegan mustard, vegan mayo, and truffle oil together in a small bowl. Stir until combined. Serve the sauce with fries.
